MARCH



For my cake this month I had about 2 hours to make it - spur of the moment birthday party for a friend. I did a funfetti bundt cake with buttercream frosting! 
It actually turned out tasting pretty delicious! The flowers were a bit of a struggle, but hey I'm still learning, and at least it turned out! Unlike February's cake..

What Does The Fox Say?




This post is mainly just to show off this cute fox cake I made! I took a cake decorating class this last month, that was super fun, and brought out my creative artistic side! The inside of this cake is German Chocolate with a pecan icing filling. The decorating was used with cream cheese frosting.

Sweet Pork Enchiladas


Delicious Delicious Delicious!
This is one of my favorite enchilada recipes!

To make the meat you will need to use the crock-pot!

Sweet Pork Recipe:
1-2 lbs of pork (you can do a pork roast)
1/2 cup Coke
1 cup Brown Sugar 
1 cup Red Enchilada Sauce 

DIRECTIONS: Place pork in crock pot with coke, brown sugar, and enchilada sauce. Cook on high for 3-4 hours or low for 6-8 hours. Shred the pork, place back in crock pot and set aside for the enchiladas. 

Enchilada Recipe:
1 can of black beans
1 (28 oz) can Green Enchilada Sauce (mild, medium, or hot)
8-10 Flour Tortillas
Small can of Green Chiles
Mexican blend shredded cheese

DIRECTIONS:
1. Preheat oven to 350.
2. Pour about 3/4 cup of the green enchilada sauce over the bottom of a 9x13 glass pan and spread evenly.
3. In each flour tortilla, place shredded pork, scoop of black beans, and cheese. Place burritos along the bottom of the prepared 9x13 pan. 
4. Pour remaining green enchilada sauce evenly over the top as well as the green chilies. Sprinkle with remaining cheese. 
5. Bake for 20-25 minutes.

Nothing says Happy Birthday like a Pazookie!!

I loveeee me some pazookie! In Texas we have the restaurant, BJ's, which makes the most delicious pazookies! And here in Utah, The Chocolate in Orem also makes some mouth watering pazookies! If you don't know what a pazookie is, it's a melted cookie with icecream on top! 
It's delicious. Trust me.
Just go get yourself a cast iron skillet and you're all set!


PEANUT BUTTER CUP PAZOOKIE

Ingredients:
1/2 cup softened butter
1/2 cup peanut butter
1 egg
1 tsp vanilla
1 1/2 cup flour
1/2 cup brown sugar
1/2 cup sugar 
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
mini peanut butter cups
chocolate sauce
icecream

Directions:
1. Mix butter, peanut butter and sugars until well blended, add egg and mix thoroughly. Add in Vanilla, salt, baking powder and soda, blend in well. Add in flour and stir until all flour is incorporated into batter.
2. Press batter into seasoned 8 inch cast iron skillet and sprinkle with 5-6 mini peanut butter cups. 
3. Bake in oven at 350 degrees for 17-20 minutes, or until edges of cookie are golden brown. 
4. Remove from oven and let cool for about 5 minutes and place a scoop of ice cream in middle of cookie and drizzle with chocolate sauce.

Boil Them, Smash Them, Stick Them in a Stew

You can thank Austen for the wonderful title of this week's post.
If you don't know where it's from here's a hint: it's from a movie with hobbits, elves, and wizards :)

So today's post is spotlighting this yummy nummy Beef Stew recipe I found!
I love love love potatoes and carrots..so obviously I was a fan.
And once again we ate our stew with some Pillsbury biscuits - they're becoming a staple item in our house now. We eat them with everythinggggg.



And we may or may not have eaten this stew while watching Harry Potter and the Goblet of Fire - it just felt like the most appropriate movie to watch while eating a piping hot dinner of beef stew!


And since it's fall I can't forget my second recipe of the week - 
PUMPKIN WAFFLES!!!
Since it was conference weekend we decided to go a little crazy for Sunday morning breakfast.
Pumpkin waffles with the prophets!
They kept us full till dinner time. haha

If you ever want to splurge on a kitchen appliance I highly recommend the giant waffle iron.
It's my favorite thing ever.
& yes, I eat the entire waffle.

Crockpot Potato Soup

It's Fall It's Fall!
And I'm oh so excited!!
You can just feel the crispness in the air in the mornings,
 and you can see the orange leaves on the ground.
And the best thing about fall: Soup.
But more importantly: Potato Soup.
THE SOUP OF ALL SOUPS!

So I found this recipe online for a crock pot potato soup and it sounded simple enough, so I thought I'd try it out! And it was actually pretty darn tasty!
Was it Austen approved - yes, yes it was.

Just perfect for a chilly day!

& we ate the soup with some Pillsbury rolls!
(which were gone in the blink of an eye)


I know - the pictures that I take are just top notch.
